Story…
Mr. Trotter Snr, the famous Fife chef made some wild garlic pesto and Mr. Trotter (Jr) fell in love with it immediately.
This is a really exciting reinvention of the Genoese Sauce. We think it tastes better but we are Scottish.
What it is…
By replacing the basil with wild garlic leaves (picked by ourselves the same day it’s turned into pesto), the olive oil with Summer Harvest’s Cold Pressed Rapeseed Oil, Parmesan with Fife’s own Anster cheese (which we have made vegetarian, specially for us) and pine nuts with walnuts, we’ve created the Scottish version of pesto.
Yum With…Pasta, fish, cheese sauce, sandwiches, potato salads, omelettes, salad dressings and certain types of cheese.
